What I ate – March 31, 2026

In the a.m.:

5:15 a.m.: I start with a cup of warm water. Then, I have a double shot of espresso with 1 tablespoon of milk as my daily immunotherapy treatment.

8:00 a.m.: Breakfast consisted of rice cakes topped with a dill tofu spread I made by freezing and thawing silken tofu, draining and pressing it, then mixing in McCormick Grill Mates Dill Pickle seasoning and a little mayonnaise. I topped it with Cleveland Kitchen Beet Medley Kraut, and Ken’s Steakhouse Light Honey Mustard dressing. This little snack has become a “go to” with whatever protein I have in the fridge.

10:00 a.m.: Had myself a little beef stick. Tillamook was on sale at Market Basket for $7.99 a bag. The texture is a little chewy and not Baby Girl’s favorite, but I don’t mind them as a quick protein pick me up.

11:45 a.m.: I have a Zoom meeting at noon so I grabbed a little treat to hold me over. If I said this mouse was made with just a summer squash and chocolate chips, would you believe me? It is dairy free and AMAZING. It’s super decadent, so best served with some fruit. I’m going to fine tune the recipe a little

The Afternoon Feeding:

2:45 p.m.: Now that the afternoon meetings are over and the pups have had their lunch, I can eat something without having to shovel it down my throat. There were some leftover sheet pan roasted vegetables that I threw in the microwave and enjoyed while trying to work on this website. I am by no means tech person, so I apologize for my novice looking site. Anyway, here’s my bowl of roasted veggies:

6:45 p.m.: A couple of squares of Lindt OatMilk Chocolate to curve my sweet tooth before dinner.

In the p.m.:

7:45 p.m.: Dinnah tonight – seared chicken strips seasoned with McCormick Grill Mates Montreal Chicken Seasoning, zucchini croquette, and couscous. If I ever make a name for myself, McCormick really should sponsor me

8:30 p.m.: Red velvet cake box cookie sandwich filled with squash chocolate mousse. I could have take a better shot, but it was so good I really didn’t want to wait. Who knows, I might have another one tomorrow.
