What I ate – April 1, 2026

In the a.m.

5:15 a.m.: my morning ritual – a cup of warm water. Then, I have a double shot of espresso with 1 tablespoon of milk as my daily immunotherapy treatment. This is an everyday occurrence, so I think I will start to omit this.

8:15 a.m.: Sliced banana and squash mousse. It looks like a pile of.💩, but so delicious.

9:45 a.m.: It’s beef stick time!

Midday Munchies:

12:45 p.m.: I made a salad with a couple of last night‘s chicken strips, romaine lettuce, carrots, red bell pepper and fake feta. Sprayed with olive oil and red wine vinegar.

In the p.m.

7:00 p.m.: Tonight’s suppah was BBQ chicken pizza. I used Stonefire Pizza Crust, leftover shredded chicken mixed with Sweet Baby Rays BBQ sauce, sauteed red bell peppers, onions, and Violife shredded “cheese”. It’s a peculiar shred….it doesn’t looks like it melts, but it gives a “gooey” mouthfeel. I drizzled some Hidden Valley Plant Powered Ranch, on top for a little added boost of flavor. This stuff does not disappoint. Baby Girl couldn’t even tell a difference between the real Ranch and this concoction.

I also found these Pretzilla pretzel bites for $.99 at Market Basket. I couldn’t eat the cheese sauce they came with, so I made my own. They were soft and had a nice flavor. Baby Girl was not impressed with their cheese sauce, and I couldn’t see spending more than 2 bucks on the container (Orignial price was around $4).

8:00 p.m.: Oops – I did it again…okay, it was intentional. It will also be on repeat until the cookies are gone. This squash “mousse” is absolutely killer! Even the Cookie Connoisseur was impressed. I think this was a better shot than the last.
