Summah Squash Mousse

I would have nevah thought to make this is it wasn’t for Lilsipper’s 2-Ingredient 0-Carb Zucchini Chocolate Mousse.
I say it makes 4 servings, but it’s so rich an indulgent that I only eat about a 1/2 of a container at a time. I like to scoop it onto fresh fruit like berries or banana slices, but it also makes a great cookie sandwich filling.


Milk chocolate would make for a lovely mousse, but due to this damn milk allergy I’ve only made it with semi-sweet and dark. It’s still very tasty, and I like to think it’s healthier (even though I’m lyin’ to myself lol).

Summah Squash Mousse
Equipment
- blendah (a food processor will work too)
Ingredients
- 2 cups Boiled Summah Squash cut int 2 inch pieces
- ½ cup Chocolate Chips or Chopped Chocolate of Your Choice
- ¼ Teaspoon Vanilla Extract
- Pinch Salt
Instructions
- add ingredients to the blendeah and mix until smooth (make sure the squash is still hot so to melt the chocolate)
- divvy up the mixture into 4 containers and refrigerate overnight
