Thinking it would be easier to take a photo of what I pack to take with me to work rather than individually snap a photo of all of the items.

I noticed I have been extremely famished lately. It may have to do with the lack of protein I’ve been getting.  I decided to start off the day with a Chocolate Premier Protein Shake.  For lunch, I packed a hard boiled egg (last one for the week), fresh cucumber from the garden, and a nectarine.

Premier Protein Shake

Protein Shakes are something new for me. I know Premier has gotten a bad rep, but they are known to have the best flavored protein shakes.  I didn’t want to spend the $9.00 on a 4 pack to only dump the first one I try and sit on the other three until they expire.  I went for the Chocolate, because they only had that and Strawberry at my local Market Basket.  To my surprise, it was pretty good.  I drank it over ice and it kept me full pretty much for the entire morning.  I would love to get the family into them, so I’m going to check out Shaw’s after work and see what kind of flavors they have in stock. I’m really interested in the Cafe Latte, Cookie and Cream, and the Chocolate Peanut Butter.

Dinner

Even though dinner looks bland, but this meal was definitely full of flavor. There were some Ritz Crackers in the cabinet that I’ve been needing to use up, so I decided to make Butter Crumb Chicken with Rice Pilaf and Zucchini Cakes.

Usually, I coat the chicken in seasoned mayonnaise before adding the crumb on top. However, I wanted to try something different. I took 1/2 cup of cottage cheese with 1 tablespoon of mayonnaise, and combined it in my food processor with the seasonings. Can I tell you, it was delicious! I can’t really say this was a healthy dish even though I only added 3 tablespoons of butter to the crumb instead of 4, but I did reduce the fat, and add in a little more protein.

For the zucchini cake, I just whipped something together and prayed for the best. I thought for sure they were going to fall apart when I fried them. Happily, I can say that they remained intact. Drizzled with some ranch dressing, which made them pleasing to everyone.

The Rice Pilaf was brought to you by Near East. It’s a never fail in our house, and all that really needs to be done is boil water.

That was it! I was so full from dinner, there was no room for sweets before bed.
