What I ate Thursday March 27, 2025

On day two without a PPI.  Not feeling much better or any worse regarding the “burn”.  It comes in waves but has been milder since Tuesday.  Still dealing with some GI issues, but nothing compared to Monday and Tuesday.  I was pretty good about the dairy yesterday I did forget about the breadcrumbs I used on the breaded beef cutlets. Not that it had much in it, but I thought I felt a little tingle in my throat.

5:00 am: Still going with the lemon, ginger, honey water.  I think it’s helping, and my tummy can tolerate it. Plus I’m getting in a glass of water first thing in the AM – bonus!

Side note – I will eventually begin to post photos again. I’m having some trouble with my camera and I’m hoping to have it resolved within the next week.

Breakfast

7:00 am:  I’m feeling like living on the wild side this morning. I’m going to try to drink a hot chocolate! A very watered-down Ghirardelli Double Hot Chocolate packet to be exact.  Although it is not made with any milk ingredients, it does say it may contain it.  To me – coming from the food manufacturing industry, that just means that it was produced on the same production line or next to a production line that may be running something with milk in it.

9:15 am: Heated up a roasted boneless skinless chicken thigh, seasoned with McCormick’s Grill Mate Smash Burger. I know this ain’t no smash burger, but I’m being crazy today and thought it would be a good combo. I was right. It was pretty tasty. So far, the onion and garlic powder have not been bothering me, so I’m going to take that as a win.

Lunch

1:48 pm: I really shouldn’t have waited this long to eat. It’s hard to eat slow when you’re famished. I scarfed down a pita pocket with romaine and pulled pork leftovers from last week. I don’t know if it was actually as good as I thought or I was just starving for something

2:45 pm: Felt like I needed a little sweet. Pulled out the strawberries

Dinnah

6:45 pm: I told Baby Girl I was making Chicken and Cheese Quesadillas for dinner tonight, which is a favorite of hers. That also means I have to stop at the market to find some plant based cheese. Not sure how that’s going to taste, but if it’s going to keep me from keeling over in pain I’ll give it a shot.

I picked up Follow Your Heart Shredded Mozzarella, thinking it would be the least intrusive and most mild. Basically, this stuff is just a bunch of fat (primarily coconut oil) and starches to bind it together and hopefully make it stretch a bit

Well, no stretch. Super creamy consistency. Maybe a little too much for my liking. I did have a little mild salsa. Literally a teaspoon. I was coughing a bit after dinner, but no burn.

I also made some Knorr chicken fried rice as a side, just to have something else to go with the quesadillas.

7:25 pm: Grabbed a handful of dried apricots as my final treat of the night.

8:01 pm: Without even realizing the time, I grabbed another apricot slice. I hope this doesn’t do me in
