Popcorn Chicken with Broccoli Slaw and Potato Croquettes

It was an after school practice night, so I wanted to quickly make something when we got home. Lucky for me, I had purchased a package of Perdue Popcorn Bites and a bag of Green Giant Broccoli Slaw during my weekend haul that were ready in minutes.

There were some leftover mashed potatoes from the night before, which made great potato croquettes. Baby Girl kept trying to eat them as they were coming out of the oil.

Served with the condiment trio – ketchup, BBQ sauce and honey mustard dressing, we were very pleased with the outcome of a dinner.

Broccoli Slaw

1 package Broccoli Slaw

1/2 Cup Ken’s Apple Cider Vinaigrette

1 Tablespoon Sugar

1 Tablespoon Apple Cider Vinegar

1 Teaspoon Dijon Mustard

Chicken Ramen noodles

  1. Combine all of the ingredients, except for the noodles (mix in the seasoning from the noodles into the slaw mix).
  2. Crush the noodles and sprinkle on top of the slaw.

Potato Croquettes

1 1/2 Cups Cold Mashed Potatoes

Corn Starch for dusting

1 Egg beaten with 3 Tablespoons Water

Finely Ground Bread Crumbs for breading

Lawry’s Seasoned Salt

Vegetable Oil for Frying

  1. Divide the mashed potatoes into balls with a tablespoon.
  2. Season the corn starch, egg wash and bread crumbs with the seasoned salt.
  3. Dust the mashed potato balls in the corn starch, dip in the egg wash and coat with the bread crumbs
  4. Fry in 2 inches of oil over medium high heat for about 1 minutes or until coating is golden brown.
