Peanut Butter Banana Cookies

Peanut Butter Banana Cookies – Makes 24 cookies
1 Stick Unsalted Butter, softened
1/3 Cup Brown Sugar
¼ Cup White Sugar
1 Egg
1 Very Ripe Banana
1 Cup Creamy Peanut Butter
¼ Teaspoon Vanilla Extract
1 ½ Cups All Purpose Flour
½ Teaspoon Baking Powder
½ Teaspoon Baking Soda
½ Teaspoon Salt
Pinch Ground Ginger (optional)
White Sugar for topping
- Preheat Oven to 350°F.
- With an electric mixer, combine the butter, brown sugar and white sugar until creamy.
- In a separate bowl, mix together egg, banana, peanut butter and vanilla until smooth.
- Slowly add banana mixture to butter mixture.
- Sift together the flour, baking powder, baking soda, salt, and ginger.
- Add the dry ingredients to the wet ingredient and mix until just combined.
- Chill dough for a minimum of 20 minutes.
- Roll out dough into 24 balls and placed on parchment lined baking sheets.
- Press each ball with the back of a fork to create a crosshatch design on the top of the cookies.
- Sprinkle the cookies with white sugar and bake for 15 to 18 minutes or until bottoms of cookies begin to turn a golden brown.
