Honey Roasted Peanut Brittle

3/4 Cups Light Corn Syrup

1 1/2 Cups Sugar

1/3 Cup Water

1/4 Teaspoon Salt

1 1/2 Cups Honey Roasted Peanuts

1/4 Teaspoon Baking Soda

1/4 Teaspoon Vanilla

3 Tablespoons Butter

  1. Line a sheet pan with foil and spray with pan release (such as PAM).
  2. In a pot, stir together the corn syrup, sugar, water and salt
  3. Using a candy thermometer, boil the sugar mixture until golden and reaches 280°F.
  4. Stir in peanuts and bring back to a boil until the mix reaches 300°F.
  5. Remove from heat and stir in butter, baking soda and vanilla.
  6. Pour mixture onto the prepared sheet pan and let cool.
  7. Once cooled, crack into pieces and enjoy!
