INGREDIENTS:

1/4 Cup Butter, softened

1/4 Cup Vegetable Shortening

1 Cup Brown Sugar

1 Egg

1/2 Cup Molasses

2 1/2 Cups Flour

1/2 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

2 Teaspoons Ground Cinnamon

1/4 Teaspoon Ground Nutmeg

1/4 Teaspoon Ground Clove

1 Teaspoon Ground Ginger

1/4 Teaspoon Allspice

1 Cup Raisins, soaked in warm water

Preparation:

  • Preheat oven to 350°F.
  • In a bowl with an electric mixer, combine the butter, shortening and brown sugar until creamed together.
  • Slowly mix in the egg and molasses until the ingredients are fully combined.In a separate bowl, sift together the remaining ingredients except for the raisins.
  • Combine the wet and dry ingredients until the dough is just starting to come together. It will still look a little crumbly.
  • Drain and add in the raisins and mix until they are are incorporated into the dough.
  • Form the dough into two log and flatten to approximately one inch thickness.
  • Bake for 15 to 20 minutes. Remove from oven and let cool for 5 minutes before cutting into 2 inch wide bars.
