Cheddar Bacon Ranch Chicken Quesadillas

I mentioned in my post for the Chicken Bacon Ranch Salad that the chicken is so versatile, the leftovers can be used to create another dish. I decided to take the leftover bacon and ranch chicken and use them to make a nice little Quesadilla.
All it took was some cheddar cheese, flour tortillas and about 10 minutes from prep to table. Talk about a quick dinner – this is perfect for those nights when work runs late or when Baby Girl has a late practice
Cheddar Bacon Ranch Chicken Quesadillas
Leftover Bacon and Ranch Chicken
Shredded Cheddar Cheese
Flour Tortilla (Burrito size)
Ranch Dressing ( I like Ken’s Buttermilk Ranch)
Olive Oil
- Combine bacon, chicken, and cheese and sandwich in between the tortillas
- In a skillet over medium heat, bush olive oil to coat the bottom and side of the pan.
- Add uncooked quesadilla and brown on each side
- Remove from skillet and drizzle with ranch dressing
