Brown Sugar Glazed Ham with Squash Coffee Cake, Honey Glazed Carrots, and Bacon and Chive Mac and Cheese
Tis the season for ham. However, my family isn’t really big on the traditional Easter dinner. I was having a hankering for the meal, so I decided to go ahead and make a ham and some sides.
Brown Sugar Glazed Ham
I bought a typical cooked spiral ham that comes with a brown sugar glaze. It was heated in a 325F oven for 10 minutes per pound.

Honey Glazed Carrots
- 1 Tablespoon Coconut Oil
- 1/3 Cup Whitt Onion, 1/4 inch dice
- 1 Clove Garlic, minced
- 1 Teaspoon Fresh Ginger
- 2 Cups Baby Carrots
- 1/2 Cup Chicken Stock
- 2 Teaspoons Cinnamon
- 1/4 Teaspoon Nutmeg
- 1/2 Teaspoon Ground Ginger
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Onion Powder
- 1/8 Teaspoon Citric Acid
- 2 Tablespoon Honey
- 1 1/2 Tablespoons Butter
- Salt and Pepper, to taste
Heat coconut oil over medium heat. Sauté onions until they are translucent. Sauté in garlic and fresh ginger and cook until fragrant. Add in carrots and toss with cooked onions. Add in half of the stock and cover, stir carrots every 1 to 2 minutes. Sprinkle in dry seasoning and fully coat carrots. Pour in the remaining chicken stock and cover for another 1 to 2 minutes, stirring occasionally. Once carrots are tender, add in honey and butter. Stir until butter is melted, then bring to a boil for 20 to 30 seconds. Turn off heat and cover until ready to serve
Bacon and Chive Mac and Cheese
The bacon mac and cheese is semi-homemade. I used Korr Cheesy Cheddar Rotini . Instead of oil, I rendered 2 pieces of bacon in a pot. I removed the bacon pieces, leaving the rendered fat. I added 1 1/4 cups of water, 1and 1/2 cup milk to the pot and bring to a boil. Add the contents of the packaging and cook for 10 minutes, or until the pasta is tender. Add 1 cheddar cheese slice and stir until melted. Mix in cooked bacon pieces and 1 tablespoon of chopped chives. let sit for 3 to 5 minutes before serving.
