BBQ Pulled Beef Sandwiches with Pasta Salad and Coleslaw
I love the way my house smells when I’m using my slow cooker. The aromas melt together and permeate through the air creating mouth watering images of what is going to be filling my belly. I also love the fact that I don’t have to do anything but remember to add in the ingredients and set it. Bonus factor – clean up is pretty easy too!
BBQ Pulled Beef
3 to 4 lb. Bottom Round Roast
1 1/2 Cups BBQ Sauce of your choice
2 Tablespoons Ketchup
1/2 Cup Brown Sugar
1/2 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
- Place roast in slow cooker
- In a bowl, combine the remaining ingredients and pour over the roast.
- Cover and set slow cooker on low for 8 – 10 hours
- Remove roast from slow cooker and transfer liquid into a pot
- Bring slow cooker liquid to a boil and reduce by 1/2
- Pull the beef and add in the slow cooker reduction sauce
- Build your sandwich with the bread or roll, and toppings of your liking
Cole Slaw
1/2 Head of Cabbage, shredded
1 Carrot, grated
1/2 Teaspoon Lawry’s Seasoning Salt
1/4 Teaspoon Celery Salt
1/2 – 3/4 Cup Cole Slaw Dressing
- Combine all ingredients and let sit covered under refrigeration for at least 1/2 hour before serving.
Pasta Salad
3 Cups Cooked Macaroni, drained, chilled under running water and tossed with oil (this keeps it from getting mushy and sticky)
1 Carrot Grated
1 Celery Stick, diced
2 Tablespoons Onion (Red or White), diced
1/2 Teaspoon Garlic, minced
1/2 to 3/4 Cup Italian Salad Dressing
Salt and Pepper, to taste
- Combine all ingredients and let sit covered under refrigeration for at least 1/2 hour before serving.
