What I ate yesterday – 7/30/24
Started this morning off with a hard boiled egg again. Not a bad way to get 6 grams of protein with only around 70 calories. Plus, they can be made in advance and stored under refrigeration for a week. Definitely a healthy “grab-and-go” food item that I tend to forget every so often.
At around 9:00 am. My co-worker handed me a warm piece of corn cake. I’m really trying to stay within my calorie range today, so I only ate a quarter of it. It was sweet and warm, but a little dry, so I didn’t feel like I was missing it too much.
Around 10:30 am, I decide to open up my container of cherries, but I only ate half. They were okay in flavor. Not the best, but not nearly the worst cherries I’ve eaten. Texture was good, and flavor was sweet enough.
When I got back from taking the pups for a walk, I finished off the cherries, at my sliced cucumber from Dad’s garden and fennel, and inhaled my cheese stick (I was trying to hide the bite taken out on the bottom lol).
Dinner was Slow Cooker BBQ Baby Back Rib Sandwiches with Milk Boiled Corn on the Cob and Pasta Salad. I had initially made the ribs yesterday, but when we decided to go to the movies, they were packed away for the next night. The flavor, and texture were still mouth watering, even after they sat in the fridge. I was able to remove the bones but keep the meat intact – which I thought was very cool. It made me reminisce about the patty used in the McRib, but I knew this was going to be WAY better
I got a hankering for something sweet, so I decided to make some mini ice cream sandwiches using Chewy Chips Ahoy and Breyer’s Extra Creamy Vanilla Ice Cream. Enjoying these while watching Ghostbusters: Frozen Empire were a good way to end the night.
