Weeknight Peach Cobbler
Ingredients
1 15 oz. Can Peaches, drain and reserve juice
1 Teaspoon Corn Starch
½ Stick Butter, melted
¼ Cup Sugar, plus 1 Tablespoon
1 Tablespoon Cinnamon
1 Can Pillsbury Grands Sweet Hawaiian Biscuits
Vanilla Ice Cream (optional)
Preparation
- Preheat oven to 375°F.
- In a small sauce pot, add ¾ of the peach juice with the 1 tablespoon of sugar and bring to a simmer. Place the other ¼ of the juice into a bowl and whisk in cornstarch. Slowly ladle in ¼ of the heated juice into the cornstarch mixture and whisk. Add the cornstarch mixture to the sauce pot with the remaining heated juice and bring back to a simmer, whisking constantly until thickened. Heat for an additional minute and remove from heat. Add in peaches and set aside.
- In a microwave safe bowl, melt the butter.
- In a separate bowl, combine sugar and cinnamon.
- Separate the biscuits and cut them into quarters. Dip each quarter into the butter and then roll in the cinnamon sugar mixture. Place half of the biscuit pieces into a baking dish in a single layer.
- Top the layer of biscuit pieces with the peach mixture and then top with the remaining biscuit pieces.
- Bake for 35 – 40 minutes or until biscuits are golden brown.
