Weeknight Peach Cobbler

Ingredients

1 15 oz. Can Peaches, drain and reserve juice

1 Teaspoon Corn Starch

½ Stick Butter, melted

¼ Cup Sugar, plus 1 Tablespoon

1 Tablespoon Cinnamon

1 Can Pillsbury Grands Sweet Hawaiian Biscuits

Vanilla Ice Cream (optional)

Preparation

  1. Preheat oven to 375°F.
  2. In a small sauce pot, add ¾ of the peach juice with the 1 tablespoon of sugar and bring to a simmer.  Place the other ¼ of the juice into a bowl and whisk in cornstarch.  Slowly ladle in ¼ of the heated juice into the cornstarch mixture and whisk.  Add the cornstarch mixture to the sauce pot with the remaining heated juice and bring back to a simmer, whisking constantly until thickened.  Heat for an additional minute and remove from heat.  Add in peaches and set aside.
  3. In a microwave safe bowl, melt the butter.
  4. In a separate bowl, combine sugar and cinnamon.
  5. Separate the biscuits and cut them into quarters.  Dip each quarter into the butter and then roll in the cinnamon sugar mixture.  Place half of the biscuit pieces into a baking dish in a single layer.
  6. Top the layer of biscuit pieces with the peach mixture and then top with the remaining biscuit pieces.
  7. Bake for 35 – 40 minutes or until biscuits are golden brown.
