Flourless Chocolate Cake

1 Cup Chocolate Chips

1 Stick Butter, room temperature

¾ Cups Sugar

¼ Teaspoon Salt

1 Teaspoon Vanilla

4 Eggs, beaten

1/3 Cup Cocoa Powder, plus some for sifting on top of the cake

Powder Sugar, for sifting on top of the cake

  1. Preheat oven to 375°F. and grease an 8-inch round spring form cake pan.
  2. Place chocolate chips and butter into a microwave safe dish and heat until just softened.  Mix together and continue to heat in 10 second intervals and stir until smooth.  Transfer into a mixing bowl
  3. Stir in sugar, salt and vanilla.
  4. Whisk in eggs and beat until just smooth
  5. Sift in cocoa powder and mix until just combined
  6. Pour batter into prepared cake pan and bake for 40 to 45 minutes or until a thin crust has formed on the top of the cake
  7. Remove from oven and let sit in the pan for 5 to 10 minutes before removing the cake from the pan.
  8. Once cooled, sift powder sugar and cocoa powder over the top and serve.
