Flourless Chocolate Cake
1 Cup Chocolate Chips
1 Stick Butter, room temperature
¾ Cups Sugar
¼ Teaspoon Salt
1 Teaspoon Vanilla
4 Eggs, beaten
1/3 Cup Cocoa Powder, plus some for sifting on top of the cake
Powder Sugar, for sifting on top of the cake
- Preheat oven to 375°F. and grease an 8-inch round spring form cake pan.
- Place chocolate chips and butter into a microwave safe dish and heat until just softened. Mix together and continue to heat in 10 second intervals and stir until smooth. Transfer into a mixing bowl
- Stir in sugar, salt and vanilla.
- Whisk in eggs and beat until just smooth
- Sift in cocoa powder and mix until just combined
- Pour batter into prepared cake pan and bake for 40 to 45 minutes or until a thin crust has formed on the top of the cake
- Remove from oven and let sit in the pan for 5 to 10 minutes before removing the cake from the pan.
- Once cooled, sift powder sugar and cocoa powder over the top and serve.
