Peanut Butter Banana Cookies

Not sure what to do with that one lonely, very ripe banana staring you in the face?  Try this Peanut Butter Cookie recipe for a sweet, soft tasty treat.

Peanut Butter Banana Cookies – Makes 24 cookies

1 Stick Unsalted Butter, softened

1/3 Cup Brown Sugar

¼ Cup White Sugar

1 Egg

1 Very Ripe Banana

1 Cup Creamy Peanut Butter

¼ Teaspoon Vanilla Extract

1 ½ Cups All Purpose Flour

½ Teaspoon Baking Powder

½ Teaspoon Baking Soda

½ Teaspoon Salt

Pinch Ground Ginger (optional)

White Sugar for topping

  1. Preheat Oven to 350°F.
  2. With an electric mixer, combine the butter, brown sugar and white sugar until creamy.
  3. In a separate bowl, mix together egg, banana, peanut butter and vanilla until smooth.
  4. Slowly add banana mixture to butter mixture.
  5. Sift together the flour, baking powder, baking soda, salt, and ginger.
  6. Add the dry ingredients to the wet ingredient and mix until just combined.
  7. Chill dough for a minimum of 20 minutes.
  8. Roll out dough into 24 balls and placed on parchment lined baking sheets.
  9. Press each ball with the back of a fork to create a crosshatch design on the top of the cookies.
  10. Sprinkle the cookies with white sugar and bake for 15 to 18 minutes or until bottoms of cookies begin to turn a golden brown.
